Butter Chicken – Hara Bhara Kebab – Butter Naan – Mint Chutney

WHAT WILL YOU COOK

Butter Chicken 

INGREDIENTS: (Serves 4 persons)

250 grams Boneless chicken

1 tsp ginger garlic paste

¼ tsp turmeric powder

½ tsp Tandori Masala

1 tbsp Lime juice

1 Medium Onion

1 Medium Tomato

2 Cloves

4 Black Pepper corns

2 Garlic cloves

½ inch piece ginger

2 green cardamom

1 Dry Red Chili

1 bay leaf

8 Cashew Nuts

1 tbsp dry fenugreek leaves

2 tbsp butter

2 tbsp oil

1 tsp sugar

2 tbsp Fresh cream

200 ml water

Salt to taste

ESSENTIAL EQUIPMENT

  • Bowl for Chicken
  • Plate for Onion and Tomato
  • Plate for dry spices
  • Small bowl for cream
  • A jug with 1 ltr water
  • Gas stove or induction
  • 1 shallow pan
  • 1 deep pan
  • Mixer Grinder
  • 1 wooden and 1 rubber spatula
  • 2 tbsp and 4 tsp
  • 1 plate, 1 bowl, chopping board and knife. 

Hara Bhara Kebab 

INGREDIENTS: (Serves 4 persons)

100 grams Spinach

100 grams peas

2 Medium size Potato

2 green chilies

10 grams cilantro/coriander

1 inch ginger

1 tsp Chaat Masala

1 tbsp corn flour

4 tbsp vegetable oil

6 Cashew nuts

50 grams plain flour

Salt to taste

ESSENTIAL EQUIPMENT

  • A sauce pan to blanch the spinach, cook the peas and boil and potatoes
  • Mixer Grinder to puree the spinach
  • A bowl to mix all the ingredients
  • A plate to mash the peas and potatoes
  • A potato masher or fork
  • A plate to keep all the condiments
  • A plate to keep plain flour
  • A shallow frying pan
  • A wooden spatula
  • A plate with absorbent paper
  • Gas Stove or induction for cooking
  • A plate, a bowl, a Chopping board and knife. 

Butter Naan 

INGREDIENTS: (Serves 4 persons)

150 grams All purpose flour

5 grams dry yeast

100 ml water

¼ tsp Baking soda

¼ tsp salt

1 ½  tbsp Sugar

2 tbsp oil

2 tbsp Yogurt

25 ml warm milk

2 tbsp Butter

4 tbsp Cheddar Cheese

50 grams all purpose flour for rolling.

ESSENTIAL EQUIPMENT

  • A Bowl to knead the flour
  • A plate for all the ingredients
  • A bowl to activate the yeast
  • 3 small bowls for yogurt+Milk+Oil
  • A plate for flour
  • Rolling Pin
  • Brush
  • Oven with Tray
  • Hot Case dish

Mint Chutney

INGREDIENTS: (Serves 4 persons)

25 grams Mint leaves

25 grams Coriander/Cilantro leaves

2 Green Chilies

1 pod garlic

¼ inch piece of ginger

2 tbsp lime juice

1 tbsp Sugar

50 ml water

Salt to taste

ESSENTIAL EQUIPMENT

  • A plate to keep all the ingredients
  • Mixer Grinder to grind
  • A jug with ½ ltr water
  • A bowl to keep the Chutney
