Chicken Vindalho – Goan Prawn Masala Rawa Fry – Steamed Rice – Pumpkin Fugath
WHAT WILL YOU COOK
Chicken Vindalho

INGREDIENTS: (Serves 4 persons)
250 grams boneless chicken
4 dry red Chilies (Kashmiri)
½ tsp Cumin seeds
10 Black pepper corns
½ tsp Turmeric powder
8 garlic cloves
75 ml Apple Cider Vinegar
1 tbsp Vodka
½ tsp sugar
1 onion
½ tsp cumin seeds crushed
2 garlic cloves crushed
2 green chilies, slit in the centre
4 tbsp Vegetable oil
300 ml water
Salt to taste
ESSENTIAL EQUIPMENT
- A bowl with chicken for marination
- A plate to keep all the spices
- Mixer Grinder to grind the spices
- 1 Deep pan to cook the Vindalho
- Gas Stove or induction for cooking
- Mortar and pestle
- A jug with 1 ltr water
- 1 wooden spatula and 1 rubber spatula
- 4 tbsp and 6 tsp
- 1 plate, 1 bowl, chopping board and knife.
Prawn Rawa Fry

INGREDIENTS: (Serves 4 persons)
16 pieces (400 Grams) Prawns
1 tsp turmeric powder
2 green chilies
8 black pepper corns
1 tsp cumin seeds
2 pods of garlic
2 tbsp tamarind pulp
Handful coriander/cilantro leaves
6 tbsp of vegetable oil
100 grams Semolina
Salt to taste
ESSENTIAL EQUIPMENT
- A plate to keep and marinate the prawns
- A plate to keep all the spices
- Mixer Grinder to grind the Masala
- Gas Stove or induction for cooking
- A plate to keep the Semolina
- A shallow pan for frying the prawns
- A rubber spatula
- A wooden Spatula
A plate, a bowl, a Chopping board and knife.
Steamed Rice

INGREDIENTS: (Serves 4 persons)
200 grams Brown rice
1000 ml water
Salt
ESSENTIAL EQUIPMENT
- A bowl to wash and soak the rice
- A Deep pan to cook the rice
- A colander
- A hot dish case
- Gas stove or induction to cook
- A Jug with 1 ltr water
- A big spoon
Pumpkin Fugath

INGREDIENTS: (Serves 4 persons)
250 Grams Pumpkin
½ tsp Fenugreek Seeds
1 tsp Mustard Seeds
1 Green chili
½ tsp Black pepper powder
8 Curry Leaves (Optional)
A pinch of Asafotida (Optional)
2 tbsp grated coconut
2 tbsp oil
Salt to taste

- A bowl for pumpkin
- A plate for all dry spices
- A deep pan for cooking
- Gas Stove or induction
- A wooden spatula
- 1 tbsp and 2 tsp
- A plate, a bowl, a Chopping board and knife.
